These jet-black Moroccan olives manufactured in southern France are heart-stopping. First dry cured, then aged in brine, the plump, wrinkly olives are meaty, just-a-bit bitter and packed with wildly aromatic flavors. Sunita marinates these olives with a little oil and dresses them with delicious Herbs de Provence including the fragrant oregano and rosemary.
